Delicious Sugar Free Dessert: Cinnamon Peaches & Mascarpone
Just because you want to get in shape and eat well doesn't mean that you'll never have a delicious dessert cross your lips ever again.
In fact, it can be the opposite! Rediscovering some sugar-free, lower calorie desserts that aren't loaded with processed foods is a fun way to get inspired in the kitchen.
(Of course like all good things, moderation is the key)!
These grilled peaches with mascarpone are something I tried out on my husband last night (he wasn't impressed with the idea because he's a salted caramel and chocolate fondant kind of guy, but then he tasted them and things turned around FAST - because they're so yummy.)
There are lots of recipes on the internet that seemed to take ages to prepare and involved all sorts of fancy mixing and baking for the cheese filling, but my super simple version tastes divine and anyone could cook it, it's so easy!
INGREDIENTS (Serves 4)
4 Peaches - halved with stones removed
Olive Oil spray or melted butter (1 tsp)
4 teaspoons of mascarpone
a sprinkle of basil leaves or mint
To make: Preheat your grill. Halve the peaches and either brush with a little melted butter or spray lightly with olive oil. Sprinkle a little cinnamon on top of the peaches and pop them on a tray. Grill for about 4 minutes. Remove and scoop 1 tsp of cheese into each peach half and put back for another 2-4 minutes. Watch the cheese doesn't burn!
To serve: Sprinkle with vanilla and leaves to finish.
(If you don't have vanilla pods that you can grate over, you could mix vanilla essence with the cheese before you bake it).
If you want an even lower calorie and higher protein version you could swap the cheese for a low fat greek yoghurt and place it with the peaches after baking. I haven't tried this but I'm sure it would taste incredible.
