Recipeasy! Ginger Beef and Brussel Sprout Stir-fry

I’m always banging on about easy veggies and I know it’s hard to get excited about green ones sometimes. Especially sprouts. (But they are so darn good for you, they help balance hormones AND it’s fall now so they’re everywhere. They aren’t just for Christmas day. Give a sprout some love, come on.)

The key to making healthy choices is to have fast, easy recipes that actually taste nice. That way you’ll want to make them, love the way they taste and keep on track.

So..enter my latest discovery...steak with ginger stir-fry sprouts.

This little gem was born out of a left over steak and half a bag of sprouts in a lonely fridge.  It’s full of good-for-you carbs and packs a protein punch while balancing your blood sugar.

TIP: Cook your steak ahead in a batch, keep it slightly rare. You can use one steak to a whole other meal, like with wilted spinach and lightly pan-fried cherry tomatoes and a horseradish sauce.

Serves 1:

Ingredients:

120g  sirloin steak (cooked)

100g brussel sprouts - shredded in the blender or chopped

50g of sugar snaps

1 tbsp, Rice Wine Vinegar

1 tbsp(s), Coconut Aminos (instead of soy sauce)

1 tablespoon, Grated Ginger (or use ginger powder to cheat)

1 clove (3 g), Garlic Clove - crushed

1 tsp coconut oil to fry.

How to:

Heat the oil, and then fry up your garlic and ginger for 1 minute, add the sprouts and sugar snaps.  After a 2-3 minutes add in the rice wine vinegar and coconut aminos and give it a stir. Keep frying until you’ve got a texture you like, I would only do mine for a few minutes. Add in the beef at the last minute to reheat but so as not to over-cook (maybe 1-2 minutes).

Serve as it is or in lettuce wraps.
