The Ugliest Recipe I've Ever Made

Happy Halloween! I thought today was a good day to share my ugliest recipe ever. (You might have guessed by now that I’m not known for my Pinterest-worthy culinary skills, I’m more about getting it done fast and efficiently and having food that tastes amazing AND helps your fat loss goals - to hell with food styling and spending hours taking pics for social media, we’ve got stuff to do, right?)

This recipe is a slight adaptation from one of the Hemsley and Hemsley recipes, of course in their book it looks picture perfect. In reality it’s just a big green mess… BUT…

It tastes divine, my version has tons of protein, healthy fibrous carbs and good fats and it helps kill eggs-for-breakfast-again boredom! You’ve even got 2 of your daily veggie portions stuffed in there in one go and only 1 dirty frying pan to clean. #lessismore

Here’s how to make a quick, healthy, complete meal in one blender and a frying pan.

Ingredients: (Serves 2)

  • ½ red onion
  • 2 garlic cloves
  • 1 bunch of coriander/basil/parsley (choose your favourite)
  • 4 eggs
  • 2 egg whites
  • 2 cups spinach
  • 1 cup cauliflower
  • ½  tbsp coconut oil
  • Salt and pepper to taste

How to make:

Mix all the ingredients except the oil together in a blender (which will chop and whisk in one go.) Heat the oil in a frying pan, then pour your mix and scramble your eggs until done to your liking. If my eggs are really thick and I want an omelette style version, transfer the pan under the grill when the bottom is done, but I love the scramble more.

You could swap the cauliflower for broccoli, or add peppers in the mix, which also make the eggs go traffic light green.

If you tolerate dairy, this is delish with a sprinkle of Parmesan cheese. If you’re off dairy then it’s great with a spicy salsa or chili sauce.

Green eggs could be stuffed into peppers, wrapped in lettuce leaves or in an oat-wrap, go wild, but stay ugly.
